You will need the following:-
Kay's All ways Every Day
Kay's Garlic & herbs or Spicy Garlic and herbs
King Prawns - or Shrimp of your size preference
Seabass- filleted or whole ( Add extra cooking time if cooking whole fish)
Corn on the Cobb
Potatoes - White or Sweet
Butter and a splash of Milk
Salt and pepper
1) Wash and season your Shrimp and Seabass - I usually do this with a squeeze of fresh lemon and water. Season the fish with Kay's All Ways seasoning & the Shrimp with Kay's Garlic & herbs or Spicy Garlic and herbs let it marinate for a minimum of 30 minutes in the fridge.
2) Peel, cut in half and wash your potatoes. Boil a pot of water and add a pinch of salt. Let the potatoes simmer for 15-20 minutes. Use a fork to feel if they are soft enough to mash before turning the heat off.
3) Place the fish in the air fryer to get a nice crispy finish for 15-25 minutes depending on the temperature settings. This can also be baked in oven wrapped in foil for 20 minutes at 375F or 180C.
4) Bring a pot to boil – once boiled place your corn in the water – where they will cook in approx. 10--15 minutes. Use a fork to feel how soft the corn is to assess if it’s to your liking.
5) Sautee your seasoned Prawns/Shrimp in olive oil on a medium heat- If raw they will turn from grey to pink. They will be cooked in 5-8 minutes.
6) Drain your potatoes- and add some butter, milk and season with a pinch of salt and pepper. I also add grated cheese- then begin to mash and whip my potatoes.
7) Take the corn out the water and drain- I add a knob of butter and sprinkle with Kay’s All Ways.
8) Place you cooked prawns/shrimp on top of the cooked seabass, add your seasoned mashed potatoes and corn on the plate and ENJOYYYYY
