Totally Tasty Tofu

I try to switch it up with my diet and consider myself to be a flexitarian haha. During the week I try to have a balanced diet of Meat, Fish and Vegetarian/ Vegan meals. Creating tasty meat free meals can be easier than you think and also very nutritious and delicious.

You will need the below :-

  • Kay's All Ways Every Day seasoning

  • Firm or Extra firm Tofu or alternative meat free protein

  • Green Beans

  • Bell Peppers

  • Onions

  • Additional Vegetables of your choice can be added

  • Soy Sauce

  • Freshly grated Ginger

1) Dry your tofu as it holds a lot of extra water- I compress between clean kitchen towels and place a heavy item like a pot filled with water on top to help squeeze the water out. Let it sit for about 30 minutes - changing the paper towels every 10 minutes.

2) While waiting for tofu to dry- wash cut and prepare your vegetables cutting them to your preferred size.

3) Preheat the oven to 350 degrees and lightly grease a baking tray or line a tray with parchment paper.

4) Once the tofu is dried - cut it into cubes and season with All Ways Every day seasoning.

5) If serving with Rice or Pasta or Potatoes - start cooking or preparing your side dish now.

6) Place the tofu in the oven to bake on a greased tray or parchment paper for 25 minutes- turning occasionally. I find this gives it a more meat like texture.

7) When the Tofu is almost finished in the oven, heat your frying pan or wok with an oil of your choice and saute your vegetables and ginger for an extra kick.

8) Lastly add your baked tofu to your pan with the vegetables and drizzle with a little soy sauce to give it a nice golden brown colour.
